Cantonese Style Noodles with Summer Vegetables

Serves 2

Ingredients:

1 Pound Thin Egg Noodles
¼ Pound Peapods
Half a Medium Onion, thinly sliced
2 Green Onion stalks, chopped into about 2 inch pieces
Handful of Bean Sprouts (optional)
2 Tablespoons Vegetable Oil
1 Teaspoon Sesame Oil
1 Tablespoon Dark Soy Sauce
2 Tablespoons Oyster Sauce

Instructions:

  1. Mix together sesame oil, soy sauce, and oyster sauce in a small bowl.
  2. Heat vegetable oil and onion in a wok or large sauce pan over high heat.
  3. When the onion starts to carmelize add the noodles, bean sprouts, and green onion.
  4. Cook, stirring constantly, until peapods are bright green.
  5. Add sauce and continue to stir until the noodles are well mixed.
  6. Enjoy!
